Hays House 1857 was founded by Seth Hays (Fun Fact: He was Daniel Boone's great-grandson) as a restaurant and trading post on the Santa Fe Trail. Our restaurant has changed hands several times in its 165-year history, but our commitment to quality food and service remains the same. Purchased in 2019 by rancher Frankie Greco and Chef Randy Dickson, we are the oldest restaurant west of the Mississippi.
